I really hope you're joking.
I think traveling is good. Just stay somewhere else every night, but save yourself enough time so you can find decent shelter. And, if you have a permanent settlement, have a lot of people, but keep things quiet. Although, I hardly doubt that would fool zombies into thinking you aren't there. (That also depends of what kind of zombies were talking about) Undead zombies are unrealistic, whereas virus related zombies are slightly more plausible.
Zombies ARE undead, it's something of a requirement. What you're referring to are Crazies or Ragers. NOT zombies.

If it's not dead, then it can't be a zombie.
When was it changed, give me a source. Are you talking about 28 days/28 weeks? That was a rage virus, making them uncontrollably violent( Ragers, not Zombies). Quarantine? That was evolved rabies (again, Ragers, not Zombies). I have 200+ zombie movies in my collection, so please, tell me when it was changed.
If it's not re-animated dead, then it's something else, generally either a rager, crazy, or mutant. Not a zombie though.
It really depends on what kinda zombies we're talking about. If they're fast ones keep moving and travel light but with slow one take up residents somewhere easily defendable. Up in the mountains would be a good place. You can see for miles around and you'll have cleaner water. Rivers and streams will be come infected. Oh and take a waterfilter.
I think a ship in the middle of a large lake or ocean is a good choice, or something like an offshore oil rig.
If they can't swim or float, zombies won't be able to get to you. Plus all you need is some fishing equipment and you have an endless supply of food (and water if you're on a lake or have desalination equipment.)
If the undead can swim or float, they are still unlikely to get to you. They have to know you're there first of all, otherwise why would they take off into a large body of water? If they do know you're there they still have to get to you, by going through miles of water where they may be picked apart/eaten by fish. If they do get near your ship you can see them coming from a long distance off due to the flat water surface and be able to pick them off. You can also set traps or alarms to warn you of any intruders.
You are also less likely to be found by other humans looking for shelter or looting (this depends on what area you are in, pirates may be a problem in some locations.)
